| Why use xanthan in dry mix hot chocolate/milkshakes |
- It is mainly used to give the sensation
of fat particles in formulations where skimmed
milk solids are used i.e. low-cal.
- The xanthan rarely fully hydrates!
- In diet milkshakes, high concentrations
can be used without making it undrinkable!
