| Xanthan Gum in Noodles |
- Xanthan is used to strengthen the noodle for
both manufacture, cooking and eating.
- Xanthan also enables improved rehydration
of “instant noodles”.
- Addition of xanthan enables noodles to be
cooked several times without breaking!
- The use of xanthan can allow cheaper (lower
protein) flours to be used!
