Xanthan gum's secondary structure involves the trisaccharide
chains wrapping around the cellulosic backbone, offering some
degree of protection of its b-1,4 links.The molecule is thought
to exist as a double stranded helical chain which is rather
rigid or rod-like and quite impenetrable to enzymes and hydrolysing
agents.The rigid and highly protected conformation of Rhodopol

all natural products xanthan gum is susceptible to bacterial
degradation in solution.Preservatives need to be added if
